June 5, 2024: Project results dissemination conference in Vilnius, Lithuania
On June 5, 2024, the project results dissemination conference of the project “NO LEFTOVER Nordic/Baltic Culinary Arts: Digital Course with Training Materials and Tools for Adult Educators” (project No. NPAD-2022/10049) took place in Vilnius, Lithuania.
The event was
hosted by the project partner Vilniaus kolegija (VIKO), a higher education
institution, at the Shed Co-living. The conference was attended by
representatives of all five partners: HOTEL SCHOOL Hotel Management College
(Latvia) in person of Development director, Chair of the council Olga Zvereva, Com&Train
(Denmark) in person of the manager Anna Högnadóttir, Vilniaus kolegija Faculty
of Business (Lithuania) in person of the Head of Training and Cooperation Laima
Paraukiene and the Lecturer Semen Burmistrov, STEP BY STEP COUNCULTING
(Iceland) in person of the Chairman Hansina Bjarnfridur Einarsdottir, and MITRA
(Estonia) in person of the in person of the Manager Pavel Smulski.
Over 50 profiled participants have attended the dissemination event and participated in the workshops and sessions. Such honoured speakers as Simas Lubauskas, the owner of JSC “7Pack”; Rokas Vasiliauskas, the executive chef of La Papa Loca and Marina, the youngest chef listed in the top ten restaurants in the Baltic states according to the “White Guide’’; Aida Matulevičiūtė-Čepukaitė, the owner of the restaurant "HBH Vilnius”. The members of the Council of the Lithuanian Association of Head Chefs and Pastry Chefs have presented their insights into the current trends on the topic of NO LEFTOVER culinary arts and today's practices of the business.

April 29, 2024: Project results dissemination conference for the project “NO LEFTOVER Nordic/Baltic Culinary Arts"
On Monday, April 29, 2024, project coordinator HOTEL SCHOOL Hotel Management College, project partners, and guests gathered at the project results dissemination conference for the Nordplus project “NO LEFTOVER Nordic/Baltic Culinary Arts: Digital Course with Training Materials and Tools for Adult Educators", project No. NPAD-2022/10049. The event was packed with insightful presentations about the project partners and project results. The partners from Lithuania, Iceland, Denmark, and Estonia extensively elaborated on the introduction of the NO LEFTOVER approach in the culinary traditions of their countries, both in the past and now.

December 1-2, 2023: 3d Transnational meeting of the project “NO LEFTOVER Nordic/Baltic Culinary Arts”
On December 1-2, 2023, the 3d Transnational meeting of the project “NO LEFTOVER Nordic/Baltic Culinary Arts: Digital Course with Training Materials and Tools for Adult Educators” (project No. NPAD-2022/10049) as well as the Digital Course Workshop took place in Sandgerdi, Iceland.
The event
gathered all five partners:
- Project coordinator HOTEL SCHOOL Hotel Management College (Latvia) in person of the Development director, Chair of the Council Olga Zvereva
- Hosting partner STEP BY STEP COUNCULTING (Iceland) in person of the Chairman Hansina Bjarnfridur Einarsdottir and the Manager Jón Rafn Hognason
- Partner Com&Train (Denmark) in person of the manager Anna Högnadóttir
- Partner Vilniaus kolegija, Faculty of Business (Lithuania) in person of the Head of Training and Cooperation Laima Paraukiene and the Lecturer of Tourism Department Jolita Variakojiene
- Partner MITRA (Estonia) in person of the Chairman Ruta Pels and Pavel Smulski
During the meeting, the parties developed the details and content for the project results, future training, and dissemination activities. The partners also visited the “Skolamatur”, one of Iceland’s biggest catering companies for schools. Their very successful catering service is based on the old traditional Icelandic food culture made contemporary, healthy, and interesting for school kids. During the visit, the partners met the founder and owner of the company, Axel Jónsson, and the managing director, Jón Axelsson; of course, taking all the precautions and formal procedures to stay safe during the volcano eruption in Reykjanespenisula. Perfect time management of the partners allowed to proceed according to the schedules.
Later, the
partners had the opportunity to carry out the workshop on old Icelandic cuisine,
learning and tasting, filming, and discussing the traditional dishes. For
example, the partners had the opportunity to taste:
- Skata, a stingray fermented in sand for six months and then boiled, served with fried pork lard and boiled potatoes
- Harðfiskur (dried fish)
- Saltfiskur
- Home-made rye bread
- Pate
- Old traditional black rye soup with cream.
The workshop was hosted by Sævar Siggeirssson and Sigríður Arna in their private home, lunching in their living room to understand various aspects of Icelandic welcoming, hospitality, and culinary traditions. Hearing their stories about old preservation methods that the partners incorporated in the developed project results, complied digital brochures, and videos, was truly beneficial.

“Skolamatur” for
the arranged visits and workshops! We are looking forward to meeting you at the
next events!
All in all, this was a unique experience for the
educators and those who have their heart set on culinary arts and are thrilled
with Icelandic weather and landscape, where people of Iceland have lived for
hundreds of years!
April 13-14, 2023: 2nd Transnational meeting in Odense, Denmark
On April 13-14, 2023, the 2nd Transnational Meeting of the Nordplus Adult Project No. NPAD-2022/10049 “NO LEFTOVER Nordic/Baltic Culinary Arts: digital course with training materials and tools for adult educators” took place in Odense, Denmark. The meeting has gathered five partners: HOTEL SCHOOL Hotel Management College (Latvia) as the project coordinator in person of the Development director, Chair of the Council Olga Zvereva; hosting organisation Com&Train (Denmark) in person of the manager Anna Högnadóttir and the chef Patrekur Sølvi Hjálmarsson; partners Vilniaus kolegija (Lithuania) in person of Jolita Variakojiene, the Lecturer at Tourism Department; STEP BY STEP COUNCULTING (Iceland) in person of Katla Hólm Þorhildardottir and Isak Ford; and MITRA (Estonia) in person of the Chairman Ruta Pels and Leonid Smulskiy.
During the meeting the parties have developed the details and content of the project results, future training, and dissemination activities. The partners visited the Kold College (Landbrugsvej 55, DK-5260 Odense S, https://koldcollege.dk) where we had extremely interesting and experience-sharing video interview with Jesper Michael Hansen, the Head of Education.
It must be noted that Odense is the hometown of Hans Christian Andersen, so the partners also visited the museum of the legendary writer.

From October 2nd to October 5th, 2022, the 1st Transnational meeting in Tallinn, Estonia, took place. The event gathered representatives of all partners:

During the meeting the parties have developed the details of the work plan and the project results, focused on the content of materials and style of the expected outcomes, and discussed future dissemination.
